I don't think all the violence is useless. The Others are training Sawyer, Jack and Kate the way you would train an animal (cages!): punishment and reward.
Sawyer got shocked by the food machine, then rewarded when he did things right. Ben knew Sawyer would try to shock him with the food vendor, so he had it turned off. Then, to discipline him, they beat him and stabbed him in the chest with that needle. What's the reward? They leave Kate alone when he's good -- the only thing they really can use to reward Sawyer. Did it work? Yes! Kate had a chance to escape, but Sawyer was too scared to go with her. Kate wouldn't leave without Sawyer, so she is behaving too.
The Others are using conditioning to make the captives docile and easy to manage.
